Happy Monday! Did y’all have a good weekend?
This weekend, I wanted something sweet. I wanted to bake. I think because it’s been so beautiful and warm for this time of year, I wanted something a little Spring-y.
I am no professional chef or baker, but I do like to bake. I do like to make my family happy and provide nourishment for them. I love nothing more than to put smiles on their faces with something yummy!
So, when I found this ridiculously easy recipe for strawberry cake mix cookies, I knew I had to give it a try. My hopes were high that they would taste as wonderful as they were to make. And indeed they were.
Both of my guys absolutely loved them. This doesn’t happen all the time. My husband doesn’t always appreciate the sweets the way Lil’ B and I do. But these cookies, he was very grateful for. As the last one was being consumed, I was asked to make some more.
Y’all, I wasn’t kidding when I said these were crazy easy. You see, there are only three ingredients?
Now, I do like to bake cakes from scratch. The more you start to bake from scratch, the less your taste buds will like the prepared cake mixes and frostings. But every now and then, a prepared mix is just necessary. This is one of those times. Trust me. Crazy easy and crazy good, y’all.
Dump the mix, oil and eggs in a bowl and mix with a hand mixer till combined.
You will get a very pretty strawberry dough. Oh my stars, I think I can smell it all over again.
You can use a cookie scoop or roll about a tablespoon of dough into balls onto a baking pan. Place in the oven.
Then comes the hard part… wait!
The wait is worth it because in about 8 minutes, you get some crazy good strawberry cookie goodness. After allowing them to cool, you can also add some icing or powdered sugar for a little extra somethin’ somethin’.
There are a couple of recipes for cake mix cookies out there. Here is where I found this one, and is my favorite of the all the others.
Strawberry Cake Mix Cookies
1 box of strawberry cake mix
1/3 cup of oil
Combine all three ingredients in a large bowl with a hand mixer. Use a cookie scoop or roll a tablespoon of the dough into balls and place on a baking sheet, 1 inch apart. Bake in a 375 degree oven for 6 to 9 minutes. Mine took about 8 minutes. You want them to be slightly browned on the bottom, but still keep there pink coloring. Allow them to cool about 2 minutes and then transfer to a cooling rack. Leave them plain, or add icing or powdered sugar. Eat and share to spread the joy!
